Description1.1 The principle of Freeze-dryingThe drying process is as follows: Firstly, the internal moisture of food has been frozen in the low-temperature environment. secondly, In the drying step, the ice inside the previous raw material will directly be converted into steam evaporation during a near-vacuum environment. Finally, the internal moisture of food will dramatically decrease. The whole dewatering process is under a lower temperature environment than that of a traditional dryer.

3. About freeze dryer question3.1 Why are not freezing and drying processes in the same room?To be efficient, our engineers choose this design. In terms of the freezing process, as the freezing and drying process in the same room, it usually adopts the secondary coolants in the refrigeration system. On the one hand, this design should consider the stability of coolants and some coolants need a regular inspection in order to ensure its moisture, air and contaminants condition. On the other hand, the coolant as an additional stage of heat transfer will bring extra energy costs. It could affect freezing time or cost extra energy.
We try to ignore the coolant effect and assume that the two designs' freezing time and drying time are 3 hours and 15 hours for each. Meanwhile, the de-icing time, raw material loading and unloading time would be ignored. We can simulate the production process and show some detail in the diagrams.
In this ideal case, our solution can process one more time than the design of freezing and drying in the same room within 108 hours, because freezing and drying can proceed simultaneously in our design. Although our design needs to extra material load and unload, the secondary coolants bring energy consumption problem that mentioned previously.
3.2 What about the double-water catcher design and its advantages?Usually, after the drying process finish, the water-catcher needs defrost and it normally takes 50 minutes. When the defrost process finish, the equipment will start a new round of drying process.
The double-water catchers' solution can save this time because when a water catcher start a defrost process, the other one will replace it and ensure equipment continues a new drying process. Meanwhile, the extra water catcher also plays spares during the production process. What is more, as more and more water has been caught, the increasing number of ices adheres to the surface of the water catcher, which will lead to the decreasing efficiency of the water catcher. Double-water catcher design can timely switch another water catcher in order to keep a high efficiency in water catcher, which can decrease the drying time.
In small scale production, extra water catcher needs to high initial equipment investment. Therefore, the double-water catcher design is an extra customization option for small and middle freeze-dryer.
In the large freeze-dryer, this solution is used by default, because the mass production needs to maintain continuity, stability, and efficiency.
3.3 About vacuum unit solutionIn our high-end freeze dryers, the vacuum system accounts for as much as 22% of the cost. In fact, this system consists of two vacuum units. In the initial stage, this solution lets both units work simultaneously in order to quickly arrive at the target vacuum degree in the vacuum room. Next, the vacuum unit with a larger power stop running and a small power vacuum unit will continue to run in order to keep the vacuum degree. For example, when a vacuum drying process needs 15 hours, the time of keeping the vacuum degree could account for about 95% of all. Therefore, during this time, a suitable vacuum unit with small power can save energy. On the other hand, if a failure occurs in a vacuum unit with small power, another vacuum unit can replace it to continue to work in order to avoid raw material loss and the effect of freezing dry process.
Although the double-vacuum unit design has brought benefits, more unit means it needs to extra cost. Hence, our engineering team also provides a single-vacuum unit design as a cheap alternative, among which its number of the tray, skip car and refrigeration system is also different from the high-end version.
